“Loaded Baked Potato” Super Bowl Dip – [Insert Deflated Football Joke Here]

Any decent Super Bowl snack table has to have a few substantial dips, and this “loaded baked potato” dip, with its three pounds of bacon, is nothing if not substantial. 

It’s also shaped like a football, which of course has been proven to taste better to people drinking beer than dips in a bowl. Speaking of beer, I think will pair nicely with something cheap, domestic, and in a can. Save the Pliny for the Kobe sliders. 

Needless to say, you can doctor this dip any way you see fit. There are so many ways you can “Tom Brady” this football, and change it to your liking. Some roasted chilies would be great, or maybe even some of that pickled pepper-onion relish I’m about to show you.

If you do want a stiffer mixture, for sculpting a more realistically shaped football, you could use part cream cheese, but I liked the lighter texture, and we still got enough height to qualify as 3-D. Ingredients for 48 servings:
3 pounds bacon
3 pounds (6 cups) sour cream
1/2 pound grated extra-sharp cheddar
1 cup chopped green onions for dip, plus more chopped green parts for the “grass.”
pinch of cayenne
1/2 tsp freshly ground black pepper
lots of potato chips

Chef John, as usual you don't cease to amaze with your hilarity and awesome recipes. I truly do enjoy seeing the final product in all its glory, and then watch you eat it too; but this time I would love to know what are you going to do with the rest of this dip? The super bowl is not for another week. Are you taking it to a party half eaten? Did you reshape it back to its original? seems like a lot of calories for an event less Thursday night.

Hi Chef John! Before I say anything, let me just say, please don't be mad at me for what I an about to say... Could you recommend a vegetarian substitute for Bacon in this recipe? I know, I know... I love bacon too! But, this year my wife and I are going to watch the Superbowl at a vegetarian friend's place. I think this dish would totally rock of course! I'm just scratching my head about what I could use instead of Bacon... Help!

So, onions make you live longer? Are you saying that if I kidnap a bunch of people, lock them in a dungeon, and feed them nothing but onions, they'll live longer than the control group in the other dungeon that I don't feed anything?

This recipe seems a little unbalanced on the fat...I mean there's plenty of protein, greens, and dairy, but it desperately needs some fat to balance out the flavors a bit. I would recommend mixing lard into the sour cream and maybe drizzing the top of the ball with olive oil.

I let my 12 year old son watch this video and he convinced me to try a "half" version so off we went to the store today to get 2 pounds of bacon and 1.5 pounds of sour cream. We are going to a very small party and so we figured half would work. I expect it to be a hit!

Got a great idea to improve your super bowl idea, instead of just green onion why not guacamole with green onion on top? Great idea I'm using it but my quac mix to it.... and yes I'm using your no tomato recipe... thanks chef

OK--so my 12 year old son made a "half" recipe using only 1.5 lbs of sour cream. Your football must be enormous because ours was huge! My son says we will be MVP of the snack table (it will help that we are also bringing an aromatic slow-roasted pork shoulder roast and home-made ciabatta). Thanks for the fun recipe!

You rock, Chef John! I made this for our game-watching party and it was a HIT. I did use my processor to fine-chop the bacon, but you are right, it's hard to pipe on crumbled bacon.
